– The wording “Extra virgin olive oil” must be present on the label and not “olive oil” or “Virgin olive oil”… they are very different things. Furthermore, do not choose the raw one (it gives an excellent flavor but degrades within a few hours) and only choose the one with the wording “cold pressed” because despite having a lower yield it retains its natural qualities
– If possible, favor those grown on the hills at a height between 200 and 500 meters above sea level because they contain more oleic acid
– Consume a maximum of 40 grams per day (4 tablespoons)… which is why I say it costs little, no more than 1 dollar per day
– Smell it, you must smell the olive, if you don’t smell it it could be old or counterfeit
– Taste it, you must feel spiciness and bitterness
– Check that less than a year has passed since the packaging date
– to produce one liter of extra virgin olive oil you need at least 4.5 kg of olives to which add packaging costs, transport etc…be wary if the cost of the bottle in the USA is less than 20 dollars
– Store it in steel or non-transparent glass containers away from light, wind and heat sources
